01Past Commissions

Three occasions.
No repeated formula.

A commission is best understood through the decisions that made it singular: what the host asked for, what the setting required, and what guests encountered when the doors opened. Client names and private details are withheld.

The brief

Create a deeply personal reception at the Frank Lloyd Wright Visitor Center for a couple planning from outside Wisconsin, without allowing distance to flatten the experience.

The architecture

Grazing opened the evening before a three-entrée plated dinner of salmon, herbed tri-tip, and apple-cider chicken with fall salad, fingerling potatoes, broccolini, and heirloom carrots. Vanilla-bean and blackberry ice creams completed the meal.

What made it theirs

A family of serious coffee drinkers inspired a vintage-carafe coffee ritual at the close. The final chapter came from who they were, not from a house template.

The brief

Build a reception that allowed guests to move through MMoCA, discover the menu in chapters, and remain present with one another.

The architecture

The food moved like the room: bacon-jalapeño burger bites, chicken-and-waffle sliders, Thai peanut rolls, Korean tacos, street corn, and curry chicken appeared across a progression of stations. Culinary presentation, setup, bistro lighting, service, and breakdown were treated as one continuous production.

What made it theirs

There was no single fixed dining moment. The architecture of the evening invited guests to choose their own pace while every detail still belonged to the same story.

The brief

Celebrate four decades of a wedding-planning company with an evening that felt more like discovery than a conventional dinner.

The architecture

A game-day grazing stadium and fruit-and-cheese installation held the room while watermelon-feta bites, purple potatoes with horseradish crème fraîche, and miniature Korean tacos brought bright, playful detail to the celebration.

What made it theirs

The milestone appeared in the room, but the food carried the celebration: abundant, graphic, easy to share, and designed for guests to enter from every side.

Bespoke is not
a visual style.

It may be a disciplined plated dinner, a table filled with familiar food, or a chef finishing each bite while moving through the room. The common element is intention.
