Roasted Pork Belly
Pork belly is truly a decadent ingredient. It can be daunting to cook, but if done correctly, can be one of the most delicious things you've ever made. Use this recipe for sandwiches, salads, or appetizers. Remember when cooking the belly to keep it low and slow. Enjoy this tasty treat!
Ingredients
3 lb piece boneless pork belly, skin scored
2 tablespoons kosher salt
2 tablespoon black peppercorns, toasted and crushed
1 tablespoon crushed red chili
2 tablespoons sugar
3 tablespoons olive oil
Method
Season pork belly with salt, sugar, chili and a few grinds of black pepper. Cover and refrigerate overnight.
Preheat oven to 450°.
Roast pork belly for 30 minutes, fat side up. Reduce heat to 275° and roast for an hour or more, until tender but not mushy. Remove from oven and let cool to room temperature.
Once chilled, slice into thick pieces and brown in a small amount of oil for crispness. For ramen, heat the pork belly up in desired stock. Enjoy!
